You Say Potato…

I say “Twice Baked Potato Salad”.
Are you tired of eating grandma’s bland ol’ potato salad every barbecue you attend? Need an idea for your upcoming July 4th Barbeque?
Don’t let grandma ruin perfectly good potato salad, offer to “take it off of her hands” and try my famous “Twice Baked Potato Salad” instead.
It is a guaranteed to be a hit.
Wicked’s Twice Baked Potato Salad
2 pounds of potatoes, peeled and cut into bite sized cubes.
1 pound of bacon, cooked and finely chopped.
3-5 chives, minced.
1 red pepper, julienne.
3 cups grated colby jack cheese.
8-10 ounces light sour cream.
1 stick of butter/margarine.
Garlic Powder to taste.
Salt and Pepper to taste.
Directions:
Boil potatoes with stick of butter/margarine 10-15 minutes or until fork
soft.
Strain potatoes.
Refrigerate for 20 minutes.
Stir bacon, chives (save a pinch for the top for garnish) and red peppers to
slightly chilled potatoes.
Stir in sour cream slowly, until the desired texture is reached.
Add shredded cheese.
Add seasonings to taste.Sprinkle chives on top for garnish.
Serves 10-20 people.
Enjoy and have a Happy Independence Day!!

I have to admit, this does sound delicious. I’m really picky about my potato salad. I loveeee red potato salad and I love unique potato salad recipes. I don’t like the mustard potato salads, so this is perfect. Mmmm. I’ll be making this tomorrow.
i dont put any mustard or mayo in my salad. not even my regular potato salad.

It barely served 4 in ours.
It was delicious. We had it with homemade pulled pork sandwiches. Wow it was sooooo good. I love potatoes.
